Healthy(ish!) Chocolate Brownie Recipe!

I thought I would do something a bit different for a post today! I really love baking, and when I was going through Tanya Burr's blog I saw that she posted a recipe for some healthy chocolate brownies. I instantly thought I had to make some similar, and share the recipe with you all. They're really low in saturated fat, and taste so good!

 


Ingredients:
300g Caster Sugar
3 Eggs
100g Ground Almonds
300g Dark Chocolate
50g Coconut Oil (or any other oil, but this is lowest in saturates)
1 Mashed Avocado
Pinch of Salt
1 Teaspoon Baking Powder
1 Teaspoon Vanilla Essence




Firstly, preheat the oven to 180C and make sure you have your baking tray ready and greased. The first thing you need to do, is heat your Coconut Oil and chocolate in a large saucepan over a low heat until it's all melted (keep stirring so it doesn't burn!). Then, once this is complete you need to turn the heat off and add all your dry ingredients - so your almonds, baking powder, salt and sugar. Once all this is mixed in, add your mashed avocado, eggs, and vanilla essence. It's important you make sure that the avocado is completely mashed so it blends completely with the mixture.

Once all this is done, pour the mixture into your prepared baking tray and place in the oven for 25 - 30 minutes. When the brownie comes out of the oven, it will still be very gooey on the inside so you don't try and remove it for at least half an hour, it just won't work!


Then, once you've allowed your brownie to cool, remove it from the tray and cut into small squares. Finito!

I hope this helped any of you looking for a healthier alternative but still delicious brownie :-) Don't be put off by the fact it's got avocado in it, I absolutely hate it normally but it's literally just an alternative to using butters to make the mixture creamy.
